Polydextrose is a glucose polymer consisting of linked glucose units (DP-12),whose structure is bonded randomly, but in which a-16 and 1-4 linkages predominate. The human body can not break down this type of bond because of lack of the special enzymes. Solubility Statement: Very soluble in water (approximately 80g/100ml at 20oC), but only sparingly soluble to insoluble in most organic solvents.
