What do you know about lactase?

Lactase is also named β-galactosidase, derived from the Aspergillus Oryzae. It's a food grade enzyme which produced from submerged fermentation.

It can be used as digestive aid in the dietary supplements.The lactase can hydrolyze the β-glycosidic bond of lactose molecule into glucose and galactose.

What's the best way to choose lactase?

Generally, lactase is categorized into neutral lactase and acid lactase.

Neutral lactase has a pH value of around 6-7 and is mostly used in food processing. For example, lactose-free milk, but lactose in lactose-free

milk has been hydrolyzed, and glucose and galactose are ingested into the body. At this time, the body will not be stimulated by lactose to 

secrete lactase, which is not conducive to the recovery of lactose intolerance.

Acid lactase has a pH value of 5 or less, and can be taken with milk powder and breast milk at the same time without being destroyed by gastric 

acid. It is convenient to consume, and at the same time, the lactose in milk powder or breast milk will stimulate the intestinal secretion of lactase

to participate in the process of metabolizing lactose, which is conducive to the training of intestinal metabolism and recovery of the function of 

lactose. Therefore, it is a better choice to use acidic lactase as raw material.

Function/Application of lactase

The Lactase from Aspergillus oryzae has a high activity at low pH(pH3.5~5.5), making it particularly suitable for digest lactose in acid conditions, and it's t

herefore ideal for use in the dietary supplements as digestive aid.

The dose of fungal lactase depends on the amount of the lactose and the size of meal consumed, one general guideline is 2,500ALU per 10~13g of lactose

consumed. We recommend a dose of 4,000~6,000ALU with each lactose-containing meal.

Other Application
Apply to process free-lactose yogurt.
It can hydrolyze the lactose in the whey to form monosaccharide which can be used by Saccharomyces Cerevisiae.
